Mix onions, garlic, oregano, and salt in a skillet and then transfer mix to the slow cooker. Add sweet potatoes to the slow cooker and cook on low for 6 hours. Thirty minutes before the soup is ready, various peppers are soaked, chopped and added to the slow cooker. Once the soup is ready it is pureed and corn, lime zest, and lime juice are added then it cooks for 30 final minutes.

Shrimp, lemon juice and a little cayenne are stirred and chilled until the other ingredients are ready. In a skillet, onions, celery, peppercorns, salt, thyme, bay leaves and tomatoes are cooked together. Everything is transferred to the slow cooker with the shrimp juice (without the shrimp) and cooked on low for 6 hours. Then the shrimp is cooked in a skillet and stirred into the mix and served.
